Ingredients 1 bell pepper, chopped 1 small/medium onion, chopped 1 can black olives, sliced 1 small jar artichoke hearts, chopped 5-6 radishes, sliced ½ large cucumber, chopped ½ cup broccoli, chopped 1 can garbanzo beans 1 medium tomato, chopped 1 box of Tri-color Rotini ½ bottle Italian dressing | Preparation Cook pasta using al dente directions provided on box. After draining pasta, return to cooking pot and add ¼ cup of dressing while pasta is still hot, mix. Add vegetables and mix to combine. Additional dressing may be added to suit your tastes. Chill and enjoy! |
These tacos are easy to prepare, taste great, and most importantly they're healthy.
Ingredients
½-1lbs Frozen Fish (cod and tilapia work well)
Spice Mixture (ingredients below)
Cole Slaw Mix (ingredients below)
Pico Mix (ingredients below)
Poppy seed dressing
Tortillas
½ Tbsp Coconut oil
Lime Juice
Spice Mixture
½ tsp cumin
½ tsp paprika
½ tsp garlic powder
¼ tsp black pepper
¼ tsp cayenne pepper
Salt to taste
Combine all ingredients in a bowl and mix well.
Cole Slaw Mix – I usually buy prepared but you can always shred your own green and purple cabbage with a few carrots.
Pico Mixture
1 roma tomato- diced
½ medium red onion – diced
½ medium jalapeno – diced
Cilantro to taste
Combine ingredients in a bowl and mix well
Fish Tacos
Pre-heat oven to 350 degrees. Place thawed fish on baking sheet drizzled with coconut oil. Rub a little oil on the tops of the fish as well. Cover fish with spice mix and bake for 10-15min until fish flakes to the touch. Remove from oven. Break fish into pieces and mix together. Squeeze fresh lime juice over the fish.
Combine slaw mixture and poppy seed dressing. 1-2 tbsp is enough; you don’t want it to soggy.
Heat up a few of your favorite tortillas.
Grab a tortilla and spoon in some fish, top with slaw and pico and enjoy!
