Breakfast Taquitos (makes 4-5 taquitos) Ingredients 4 eggs, beaten with 1 Tbsp of milk Bacon, 1 piece per taquito/ cooked ½ white onion, sliced ½ bell pepper, sliced ½ jalapeno, sliced 1 tbsp. butter Tortillas, 1 per taquito Optional Toppings Shredded cheese Sour cream Black beans Pico or salsa | Preparation Melt ½ tbsp. butter, over medium heat, in a small skillet. Add onion, bell pepper, and jalapeno. Sauté until desired doneness. In separate skillet, melt ½ tbsp. butter over medium-low heat. Add beaten eggs and scramble. Warm tortillas. Fill tortilla with bacon, scrambled eggs, and sautéed vegetables. Top with any optional topping of your choice and enjoy! |
