These are healthy, delicious, and oh so easy to throw together!
Ingredients
1lb chicken thighs, cut into bite sized chunks
1 onion, chopped
3 garlic cloves, minced
½ bell pepper, chopped
1 can rotel tomatoes
1 small can chopped green chilies
1Tbsp. coconut oil
1 lime, juiced (optional)

Garlic powder
Paprika
Chili Powder
Cayenne Pepper
Pepper

| Preparation Marinate chopped chicken in the juice of 1 lime for 30 minutes, or up to overnight, before cooking. This step is optional. Heat skillet over medium/high heat, add coconut oil. Once skillet is coated with oil, add chicken and spices. Stirring often, cook chicken until white. Once chicken is cooked, add onions, garlic and bell pepper. Cook until onions are translucent. Add canned tomatoes with liquid. Continue cooking over medium heat until liquid has been reduced. Serve on warm tortillas or over black beans and rice. |
