These bad boys are perfect for game days, week days and pretty much any other time you want to make them!

CHOPPING
Chop all vegetables; add to large bowl and mix to combine. Beat eggs, add milk. Using a 12 muffin pan, grease each muffin tin with oil. Place 1 slice of deli meat in each muffin tin, add ¼ cup of veggie mixture. Pour equal amount of egg in each cup and salt and pepper to taste. Bake in 350 degree oven for 20 minutes. Remove from oven and let cool for 5 minutes. Flip pan over to remove egg cups. They can be stored in a zip lock freeze bag in the fridge for up to 1 week.
