Ingredients 1lb ground beef 1 can kidney beans 1 can red beans 1 can pinto beans 1 can black beans 1 can chili tomatoes 1 8oz can of tomato sauce Frozen corn or 1 can corn 1 onion, chopped 1 bell pepper, chopped 3-4 cloves of garlic,minced 1 jalapeno,chopped 3-4 mushrooms,chopped 1Tbps Chili Powder 1tsp cumin ½ tsp paprika ½ tsp garlic powder ½ tsp onion powder ¼ tsp cayenne pepper Salt and pepper | Preparation Over medium heat, brown ground beef in a large pot. Once browned, add onion, garlic, bell pepper, jalapeno and mushrooms. Stirring occasionally, continue cooking until onions become translucent. While beef and vegetables are cooking, open beans and drain in a strainer (if using canned corn, drain also). Once onions are translucent, add beans, corn, tomato sauce and canned tomatoes (juice included) and 2 cups of water (may substitute with vegetable stock). Add seasonings, stir and cover. Let simmer over medium/low heat for at least 30 minutes. Serve with cheese, sour cream, avocado and my favorite, Fritos! |
